It is statistically on the rise, as the "baby-boomer" market has become concerned about weight, personal health, well-being and aging. D. At Candle Cafe we give the food an international face, as we feature cuisines from all over the world. E. I have been in the business 21 years and have never been busier. We're packed day and night with a major delivery business. F. Evidence that more mainstream people are eating our food is the fact that our ingredient book is requested less frequently. Our clients love the food and are not as concerned about allergies and other eating considerations that used to be a major part of the whole foods business. G. A new buzz word in the industry is "functional foods," they provide a physiological benefit beyond basic nutrition. Sales projections for conventional foods are flat, while projections for functional foods are double digit growth for the next 10 to 30 years. Vegetarian Times--May 1999 H. The word is out, the eating public wants and needs this quality of food. Our neighborhood has some of the trendiest and most expensive restaurants, and their client base is our client base. In fact, the chefs and staff of these restaurants often eat with us. They love our food.
I. We are also very, very politically correct. Our client base is very active in environmental issues and animal rights. Our celebrity following is particularly active in these areas, and of course they influence the general public.
