JOY: Patrons of Candle Cafe, in New York City, know Joy Pierson as the warm, engaging and energetic restauranteur who has infused the Upper East Side dining scene with healthful and palate pleasing vegetarian cuisine.

Less known about Joy Pierson is that her delectable and creative dishes are the result of 20 years of experience as a nutritional counselor, and her tireless search world wide for the latest gastronomic innovations that make her vegetarian dishes appealing to committed vegetarians and dedicated carnivores alike.

Joy is the coordinator of customer service, marketing and public relations for the Candle Cafe. In addition to recipe and menu development and nutritional analysis, she supervises the restaurant's staff.

Joy has written and lectured extensively about food and nutrition. She regularly leads workshops and teaches courses on diet and nutrition, most recently conducting a series of food workshops at Barnes & Noble. As a spokeswoman on vegetarian eating, Joy has appeared on Good Day New York, CBS News This Morning and The Food Network's TV Food Diners. She has also been a radio guest on The Howard Stern Show and on Walden's Pond with Sheldon Walden on NPR.

A Magna cum Laude graduate of Tufts University where she studied psychology and nutrition, Ms. Pierson is a member of the National Association of Female Executives and is in the World's Who's Who of Women. She was nominated as one The 2000 Notable American Woman by the American Biographical Institution.

BART: At the vanguard of health food marketing and vegetarianism, Bart Potenza has written and lectured on diet and health since the mid-1970s. He has become a major spokesperson for the health food industry.

After studying at New York City College's Business School, Bart became a successful art dealer. He then made a career change and was the manager of a health food store in his Upper East Side neighborhood.

Bart owned and operated Sunny's, a local juice bar and retail shop. After extensive renovations, it became The Healthy Candle, which was a very busy and popular health food cafe for 13 years. In 1994, customer demand again prompted expansion. Bart and his partner, Joy Pierson, opened The Candle Cafe, which has been highly successful since the day it opened.

In addition to his managerial expertise, Bart provides a wealth of inspiration and information through his daily aphorisms, which he shares on the voice recorded "on hold" phone system. The success of the Candle Cafe proves Bart's original assertion which is that super healthy vegetarian food is the wave of the future.
